This recipe for blueberry muffins is so easy it’s nearly impossible for non bakers like me to screw up. And for something so simple it tastes really good.
I found this recipe on VegWeb.com and modified it slightly (I use low fat vanilla soy milk instead of plain soy milk and add extra blueberries). The preparation time is about five minutes so you can make these muffins for breakfast without having to wake up early.
1 ½ cups flour
½ cup sugar
1 tsp salt
2 tsp baking powder
¾ cup vanilla soy milk
¼ cup oil
1 ½ cup frozen blueberries
Preheat oven to 400 degrees. Mix together flour, sugar, salt, baking powder, soy milk and oil in a large bowl. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes. This recipe makes about 8 muffins.
