Banana Muffins Recipe

Making banana muffins with my toddler has become a fun weekend tradition. It started when we had overripe bananas, and now almost every day she asks for a banana muffin. After trying various recipes and tailoring it to our tastes, here is our recipe.

Ingredients

  • 3 ripe bananas
  • 1 ½ cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ cup sugar
  • 1 egg, beaten
  • 1/3 cup melted butter
  • optional: ½ cup nuts or chocolate chips

Directions
Preheat oven to 375 °F. Combine flour, baking powder, baking soda, salt and cinnamon. In a separate large bowl, mash bananas. Add egg, melted butter, sugar and stir. Add dry ingredients and mix. Put batter into muffin tray lined with muffin papers. Bake for 20 minutes.

Makes 12 muffins.
